The victory secured Gambia's place in the quarter-finals with a game to spare.
Kajally Drammeh scored the first goal in the second half, followed by a penalty from captain Alagie Saine to seal the win.
Gambia dominated the match and had numerous chances to score in the first half.
Despite a better start to the second half by Zambia, Gambia continued to have possession and secured their win with a penalty.
With this victory, Gambia has guaranteed first place in Group C and will play against Benin in their last group match while Zambia will face Tunisia.
